What is a better way to learn how to cook than growing up in an Italian mother's kitchen?


My mother, Mary Hilbert, owns Mary's Mobile Diner, one of the first gourmet food trucks to run south jersey. Her constant hustle and creativity, along with my father's entrepreneurship and dedication to his craft (masonry) has taught me what it means to be passionate about everything you do. Especially when it comes to my food. 

Cooking has always been a part of who I am. I love bringing everyone together around good food. To me cooking is love made visible, it is how I show that you are important to me. 

I have been in the restaurant industry since I was 12 years old. Starting as a busgirl cleaning tables at my local diner to becoming the General Manager of a brand new restaurant at the ripe age of 21. I have a vast understanding of what it takes to satisfy my guests and keep them coming back.


I decided to embark on my own entrepreneurial journey by starting Red's Rolling Restaurant, and two years later we are still rolling around serving great food and meeting amazing people along the way.
